    This is a recipe for homemade peanut butter for Elijah. Assuming you can get peanuts ๐Ÿ™‚ This was recommended to me to try so thought I would pass it on. Let me know (honestly) how it turns out. If you don’t have a food processor ๐Ÿ™‚ maybe try an old timey method of a mortar & pestle – fun activity for the kids. Hope this helps

  2. What about Lentil and Quinoa stuffed peppers? Use the onions, white cheese, and tomato along with chili powder and cilantro for seasoning.
    Also, eggplant lasagna. slice it no thicker than 8th inch pieces lengthwise and use as your pasta noodle. shred cooked chicken for meet or leave the meet out. Make pasta sauce with tomato, onion, basil and garlic. Layer with soft cheese (like ricotta) and mozzerella. bake 350.

    Also, desert–bread pudding. 5 eggs to two cups of milk and 4 cups dried bread chunks. add nutmeg, 1/2 cup sugar 2tbsp. vanilla. if you can’t get milk, try coconut milk/water. bake 350.

    I see chili and apple crisp ingredients on the list.

    There is a white bean soup I love.
    2 cups dry beans
    2 cups carrots diced in long 1 1/2 inch sections (different than coins for fun)
    garlic
    tomato
    (spinach or other green if you can get it.)
    Soak and cook beans to tender. Drain. (save 2 cups liquid)
    toast garlic powder in oil in skillet, add basil (to taste) and salt/pepper
    Add carrots and let slightly carmelize.
    Add beans, 2 cups tomato diced
    and greens if you can find them.
    Add reserved bean liquid and six cups water flavored with chicken flavoring (or if you have stock made from one of those whole chickens)
    Cook ’til carrots are tender but not squishy.
    We love this soup.

    You can make stirfry with eggplant, pineapple, chicken, carrot, pepper, onion. use garlic and any other asian’ish seasoning you can locate. but, I don’t care if I leave out soy sauce. it is still yum with just garlic.

  3. Also, vegetable chowder.
    Start with a bit of butter and onion. Add fave veggies that you can get including diced sweet potato if you can get it. Some chicken stock and lots of milk.

    And potato soup with milk and the white cheese.

    add some hot peppers and beans and cheese.

  4. and chicken tortilla soup.
    you have the makings for that also on the list.
